I just wanted to add a shortcut to the "Open copy/move/tools windows" shortcut, but I wanted to use the Delete key for that. However it does not work, same goes for backspace, all other keys work fine. Backspace also does not work.

I have no caps lock on, no keybindings to that key from ...

I personally can highly recommend OBS for this. You can set all sorts of parameters, like framerate, which display to capture, resolution, up/downscaling, bitrate.

You can even create scenes with it, and switch between scenes (like multiple monitors), or add a webcam or even multiple, audio ...

I did found out, that when you open task manager > go to the gPhotoShow process > right click > go to details > then a list will show with the gPhotoShow process listed, from there you can still set the priority.
